We cooked a 16 lb bird in our oven this Thanksgiving...a bunch of us at the campground had a potluck that was awesome!...and it cooked great, tender and juicy.  We used a cooking bag, and our friend Arlene turned us on to a great trick to keep your RV oven from burning the bottom of stuff you are cooking that fill the oven (the sheetmetal over the flame is pretty thin and if what you're cooking is too close to it, say on the bottom rack which puts ours 1/2 inch above the sheetmetal)...put a 12x12 terra cotta or ceramic floor tile right on the sheetmetal and leave it there!   It acts as a heat buffer and keeps things from burning on the bottom, but it heats up itself and doesn't slow down the cooking time.  We leave the tile in the oven all the time now.  Terra cotta works best, since the ceramic tiles can crack from the heat, but that is rare.
