You'll need to mess with the springs to change the valve stem seals - which is strongly recommended.

Is that what the rubber cup looking things are in the gasket kit?

Unless you are going to put in a race cam ignore that video. Changing valve seals with the heads off is easy. The only trick is DO NOT LOSE THE KEEPERS!!!!!! How many miles on the engine? Were you having any problem prior to the head gasket?

Take the complete heads to an automotive machine shop to have them refurbished.  Valve job, check guides, new seals, check spring pressure etc.  They can also remove the broken exhaust manifold bolts too
