I think an important first step would be to measure the existing roof dimensions, and make a drawing-to-scale of as much detail as you can from above and inside. You can add to the drawing as you strip off the old roof. This will help you to know where you should have rafters or places where a cabinet might screw into the ceiling and need some extra wood, and where to run wiring, etc.

I plan to remove most of the inside cabinets and walls before I do the roof, because they need work too. I also plan to have more rafters than Winnebago used - like the handierman photos. I already know I first need to fix up half of a wall (at least) and a good bit of floor on the drivers side.
If you do the work outdoors, what will your plan be for covering the open RV with tarps in the event of rain/wind?

I'm actually in the process of rebuilding my roof. (72 brave) What I found was the roof was made of a thing layer of wood (thin as paneling), and about 3/4 inch of Styrofoam, then another layer of wood. Ontop of that was a thin skin of metal. My roof had a bad sag where the AC unit had sat, causing water to puddle in the middle. The previous owner(s) had ran some steal bars across the top of the roof and placed 2x4s under the steal bars, kinda sandwiching the roof between the steel bars and the 2x4s. This kinda helped, but it still puddled.

I would suggest looking over the handier mans photos. He did a really good job taking pictures.

My roof was so rotten, I was able to tear most of it off with my hands. I left the cabinets on the wall.

I'm adding pictures as I go, look at mine as well, maybe it will help you get an idea of what your getting into.

My brave is a D20, and here is what I've bought so far.

16 2x4s
5 sheets of 1/4 plywood.
5 tubes of Mr. Nails
1 box 1" drywall screws

I plan on using a rubber roof on top of the wood, and using Styrofoam for insulation in between the 2x4s.
