It's been running a couple of days now and the fridge just doesn't want to get colder.  The freezer works like a champ. I was wondering about the flame level setting and tried adjusting it while the wife watched it from outside and she said she saw no difference. Possibly the change was too subtle? How much should adjusting the temp knob adjust the burner? I'm hoping it's just not getting enough heat rather than it needing a burp.

The thermostat tells the burner when to turn on and off it doesn't change the flame.  You may need to clean and adjust the burner.

The flame might not be hot enough.   Hows it do on electric?

Normally if the freezer is working and the fridge is not, either the flame needs adjusted to be hotter, or if on electric, the heating element is starting to go bad.   So if it works well on electric, its safe to assume the flame needs adjusted.

Makes sense, but how do you adjust the flame? I haven't had a chance to try it on electric yet.

Here's some things to look at:

I found these using the message search - "frige not cold"

This is not an uncommon problem so we do have those topic and more already on the boards for you to look over.

Although we don't have the manual for your particular Dometic model, we do have one for the RM series and it contains troubleshooting guides and may be very similar to yours in configuration.  You're a full member so, you can just download it and take a look. It certainly couldn't hurt.

Thanks for this; it gives me a lot to look at. I'm interested in the fact that overnight the fridge gets colder, which suggests to me that there might be junk blocking the rooftop exhaust vent or something else is in the system blocking airflow.

When we set up camp in hot weather now we prop open the outside access door of the fridge.. increases air flow over coils and fridge/freezer temps drop.

Well I took the burner apart, no easy feat because of the rust. The orifice was a little gummed up and I cleaned it out. All the pounding on the screws also dropped a ton of rust out of the chimney, which couldn't have been helping much. It will be interesting to see if all that helps.

The other thing I noticed is there is a cylindrical device just after the shut-off valve that looks exactly like a miniature in-line auto fuel filter. Could that actually be a filter?

If the previous work didn't help that's my next stop. There is nothing blocking the flow of air to the roof, so the other possibility could be chimney obstruction, but I'll have to pull the fridge to check that; my last option.
