I scanned the forum for panel repair and it seems that most people pulled and replaced outright.
Has anyone used a skim coat of wood filler or similar product to fill and repair (kind of like drywalling)?
I considered drywall mud but quickly ruled it out based on flexing and heat/cold stress.
We plan on priming and painting the entire interior.

Well, it may sound funny and I have not done it but the first thing that comes to mind is Bondo, or automotive body putty. It is pretty waterproof and slightly flexible and has great adhesion.

Yes automotive bondo is great stuff. You can use it to repair wood.
