Can the existing sliding windows on the older model Brave & Chieftan be modified to use as a serve thru concession window?

Absolutely!  The body is made of wood and a sawzall and basic carpentry tools is all you need, along with amagination.  You can do just about anything you can dream up with these old rigs.  Except maybe intergalactic travel.
