Replace roof

Ok. The wife and I (daughter and dogs as well) love to camp. We have our 89 chieftain 31rq. We have actually been looking at selling it and getting something newer. After a long talk we came up with a list of things we need and would like to have to have on our coach. Of course I understand that we can't make our coach into a state of the art rig nor do I really want to. The first thing we have to do find the leaks in the roof. I have found a decor product and used it last year. I thought I stopped all the leaks but it didn't. So instead of chasing leaks and putting more and more product on top of it, how hard is it to tear the roof of and lay a new sheet of aluminum on top? Has anybody done this? Or is this something that I should leave to the pros?
