Have had it a couple of months, a couple of 500 mile round trips, upgrading it as I go along, but...

When driving the heat exchanger heats up the hot water tank nicely, good temp after driving 100 miles. Then when parked and I turn on the LP hot water heater, the hot water gets way too hot. How do I turn that down? I can't find any adjustments.

Do you have a make and model number for that water heater?

All the older water heaters I've seen have the water temp adjuster lever right under the regulator.  Open the outer hatch and look at the knob that allows you to turn it on and light the pilot light, etc.  There should be a small silver lever under the knob housing which adjusts temperature.
