Hello everyone, I have just purchased a 1984 Winnebago Chieftan 30ft. The 12V water pump is cracked and needs replaced. I have see water pumps range from 4 gallons per  to almost 10 with varying amounts of water pressure. Would something that does 6 or 8 gallons of water be to much for the rv to handel?

More than about 4 GPM is really unnecessary. The important value is the pressure. Your system cannot withstand a pressure higher than 40 PSI. Most RV water pumps shut off at about 35 PSI or so.
